Tavern Ham
Cut in half lengthwise, place in roaster with one inch of water and bake at 350° for 3 hours. Take out of pan when cooled a bit, then trim outside skin off and slice. Sprinkle ½ cup brown sugar and pineapple juice over ham and heat at 225° for 30 minutes.
Rachel’s Smoked Turkey
Put 1 inch of water in roaster pan and place turkey in breast side down, or use turkey roasting bag. Bake at 275° for 6-7 hours or overnight. Let cool, then debone. Make a gravy with the broth and layer it in roasting pan with deboned turkey. Keep warm until ready to serve.
Smoked Turkey
Add one inch of water to bottom of roaster pan and cover turkey with lid or foil. Bake at 325° for 10 minutes per pound or until meat thermometer reads 165°.
